For the Beech I usually figure 200 lbs per passenger and crew member. For other aircraft I usually figure 200 lbs per passenger + 40 lbs each for baggage with the same for the crew. This is not in stone and you can load up the way you want.

Pausing the sim should be no problem unless you are flying online under Air Traffic Contol. Then you should advise ATC of your situation before pausing. He may request that you disconnect while your are paused.

Well, I don't have one of those joysticks but my joystick has 2 thumb toggle switches. I have one programed for flaps and the other programed for elevator trim.
